 7-UP Cake Recipe

Photobucket  This recipe was in one of the forums I belong to. I used to make this cake all of the time, but had pretty much forgotten about it. It is delicious and gets special attention at party’s time and again. The post I saw called for a bundt pan, but I have always used two cake pans and used a lemon filling with coconut marshallow topping. I did that because my mom used this kind of filling. Of course she used Watkins lemon extract because she always used that brand. However you make it, plain or fancy, the cake is moist and delicious.

Ingredients

1-1/2 cups Butter
3 cups of sugar
5 eggs
3 cups of flour
2 Tbsp. Lemon Extract
3/4 cup 7-UP

Directions

Pre-heat oven to 325 degrees.

Cream sugar and butter together and beat until light and fluffy. Add eggs, one at a time, and beat well. Add flour. Beat in lemon extract and 7-up.

Pour batter into well greased and floured two cake pans (8-inch) or one  jumbo bundt pan.

Bake at 325 for 1 1/4 hours.
